Who doesn't love biscuits?! Here is a quick and easy recipe for a delicious treat without all the refined sugar and carbohydrates you usually find in store bought versions. These can be made nut free which makes them perfect for kids lunchboxes.
I love to use natural sweetners in my baking, rapadura sugar it is a unrefined cane sugar which is dried at low temperatures to maintain nutritional properties and there is no other processing involved, unlike other sugars that can be highly processed, refined and bleached.
Healthy Oat Cookies
(Approximately 15 cookies)
INGREDIENTS
1 cup rolled oats (alternatively use 1 cup desiccated coconut)
3/4 cup spelt flour or buckwheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
pinch of salt
1/2 cup coconut oil, melted & slightly cooled
1 large free range egg
1/2 cup rapadura sugar
1 teaspoon organic vanilla extract
Flaked almonds for topping (optional)
METHOD
1. Preheat oven to 180°C.
2. Whisk together oats, flour, baking powder, cinnamon, sugar and salt in a medium bowl.
3. In a separate bowl whisk together coconut oil, egg and vanilla.
4. Add in the oat mixture, stirring just until incorporated, add extra coconut oil if mixture is to dry.
5. Form 10-12 medium cookies and place on grease proof baking paper. Bake for 12 - 15 minutes or until golden brown.
