I love to use Rapadura sugar in my baking, rapadura sugar it is a unrefined cane sugar which is dried at low temperatures to maintain nutritional properties and there is no other processing involved, unlike other sugars that can be highly processed, refined and bleached. I buy my Rapadura sugar here.
Chewy Almond Biscuits
(Approximately 15 cookies)
1 1/2 cups almond meal
1/4 cup finely shredded coconut
1/4 cup rapadura sugar or monk fruit sugar (low carb option)
1 1/2 teaspoons baking powder
1/2 cup organic sultanas (optional)
1 tablespoon cocoa
1 teaspoon cinnamon
1/2 cup melted coconut oil
1/4 cup rice malt syrup or pure honey (optional)
1. Preheat oven to 180°C.
2. Mix together dry ingredients in a medium bowl.
3. In a separate bowl whisk together coconut oil, egg and vanilla.
4. Add in the dry mixture, stirring just until incorporated, add extra coconut oil if mixture is to dry.
5. Form 10-12 medium cookies and place on grease proof baking paper. Bake for 12 - 15 minutes or until golden brown.
