Chia Butter Pudding

Chia seeds are loaded with nutrients and are rich in Omega-3 fatty acids which have important benefits for our body and brain.


Chia seeds make a great porridge especially paired with a creamy nut butter. Make up a big batch and store in mason jars in the fridge for breakfast or a nutritious snack.


Chia Butter Porridge (SERVES 2)


INGREDIENTS

  • 1 cup coconut cream/almond milk (50:50)

  • 3 tablespoons chia seeds

  • 1 teaspoon of cinnamon

  • 1 tablespoon almond butter

  • 1 tablespoon rapadura sugar or rice malt syrup

  • ½ diced banana or ½ cup berries

  • Pinch of seaweed salt

METHOD


  1. Add coconut cream/almond milk, chia seeds, salt, cinnamon, sugar and almond butter to a saucepan.

  2. Bring to the boil and simmer until porridge thickens, stirring throughout.

  3. Stir through banana or berries, pour into a bowl and serve.
