Chia seeds are loaded with nutrients and are rich in Omega-3 fatty acids which have important benefits for our body and brain.
Chia seeds make a great porridge especially paired with a creamy nut butter. Make up a big batch and store in mason jars in the fridge for breakfast or a nutritious snack.
Chia Butter Porridge (SERVES 2)
1 cup coconut cream/almond milk (50:50)
3 tablespoons chia seeds
1 teaspoon of cinnamon
1 tablespoon almond butter
1 tablespoon rapadura sugar or honey
½ diced banana or ½ cup berries
Pinch of salt
Add coconut cream/almond milk, chia seeds, salt, cinnamon, sugar and almond butter to a saucepan.
Bring to the boil and simmer until porridge thickens, stirring throughout.
Stir through banana or berries, pour into a bowl and serve.
