Chocolate Black Bean Brownies

A great source of Iron, fibre and folate these brownies not only taste yummy they are healthy. Who would have thought they are gluten free, diary free, refined sugar free and so quick and easy to make!

Chocolate Black Bean Brownies

INGREDIENTS

400g canned black beans, rinsed well

3 eggs

1/3 cup raw cacao powder

1/3 cup rapadura sugar

1 cup dates, pitted

3 tablespoons coconut oil

pinch of salt

1 teaspoon baking powder

1 teaspoon vanilla extract


METHOD

  1. Preheat oven to 160 degrees.

  2. Place all ingredients into a high speed blender and process until smooth.

  3. Pour into lined baking dish (20x20cm) and bake for 20-25 minutes or until passes the skewer test. Serve with berries and coconut yoghurt.
