Chocolate Black Bean Brownies
INGREDIENTS
400g canned black beans, rinsed well
3 eggs
1/3 cup raw cacao powder
1/3 cup rapadura sugar
1 cup dates, pitted
3 tablespoons coconut oil
pinch of salt
1 teaspoon baking powder
1 teaspoon vanilla extract
METHOD
Preheat oven to 160 degrees.
Place all ingredients into a high speed blender and process until smooth.
Pour into lined baking dish (20x20cm) and bake for 20-25 minutes or until passes the skewer test. Serve with berries and coconut yoghurt.
