I N G R E D I E N T S


Base

  • 1/4 cup pumpkin seeds

  • 1/4 cup sunflower seeds

  • 1/3 cup desiccated coconut

  • 2 tablespoons raw cacao

  • 5 dates

  • 1 tablespoon rice malt syrup

  • 2 tablespoon water

Filling

  • 1/4 cup rice malt syrup

  • 1 cup cashews (soaked for 3- 6 hours)

  • 1/3 cup peanuts

  • 1/2 cup dates

  • 1/2 teaspoon tahini

  • 1/2 teaspoon of salt

  • 2 tablespoons coconut oil, melted

  • 1/3 cup peanuts (to sprinkle on top of filling)

Chocolate Ganache

  • 1/3 cup cacao butter

  • 1/2 cup cacao powder

  • 2-3 tablespoons rice malt syrup

  • 2 tablespoons coconut oil, melted

  • 1 tablespoon smooth peanut butter

M E T H O D

  1. Combine all base ingredients in a high powered, blender until smooth.

  2. Transfer mixture into 17cm tin, use your fingers to press down the mixture. Place in freezer while you make the filling.

  3. Drain and rinse soaked cashews and place with the rest of the filling ingredients into blender, blending until smooth. (No need to rinse blender after first use)

  4. Spread on top of base and then sprinkle peanuts over the filling, return to freezer.

  5. To make the chocolate ganache combine all the ingredients into a small bowl and heat in the microwave or on stove top until melted and smooth.

  6. Pour on top of the filling and return to freezer for 3-4 hours. This slice is best stored in the freezer and placed in the fridge 1-2 hours before serving.
